There really is no substitute for old friends, and I feel extra grateful for that (and the Webers!) today 🧡

I’ve been in a bit of a cooking funk lately. Lat I’ve been in a bit of a cooking funk lately. Lately being... awhile. But this tiny squash (that looks like it came from a craft store but actually came from @radishandrye) might have finally broken the spell. Special thanks goes to the recipe for Mushroom Stuffed Squash Salads in the fall issue of @magnolia magazine—and to takeout, boxed mac and cheese, and a thousand bean and cheese quesadillas for filling in while I’ve been MIA. Bring on all the fall food.
I made this 30-minute meal in approximately 15 two I made this 30-minute meal in approximately 15 two-minute increments throughout the day, because Monday. It’s the easiest: rice boiled in coconut milk, mixed with kidney beans and some lonely stalks of kale from the garden (that are holding a bitter grudge about being neglected, and it shows), seasoned with salt. Later, I tossed a Mahi Mahi filet in an extremely generous coating of Nigerian Suya from @calicuttsspiceco and fried it in some olive oil. It was 1000% the comfort food I didn’t know I needed, and I feel extra grateful—so grateful that I’m about to continue the party with one of the last homemade brownies (@loveandlemons!) topped with cookie crumble ice cream (@vanleeuwenicecream!).

What a way to end a Monday. Thanks for the unexpected joy, food.
